Obituary

Carol Sanstead Shubeck was born October 26, 1921 in Berthold, ND to Ollie and Ethel (Smith) Sanstead. She died July 27, 2017 at Sanford Hospital in Sioux Falls, SD at the age of 95 years, nine months and one day.

She was an only child and was raised and educated in Berthold, ND where she was active in band and chorus and participated in class plays. Each summer Carol helped her dad on the farm mowing and raking hay and cultivating with horses. She graduated as Salutatorian one year early. Carol attended Concordia College in Moorhead, MN one year and graduated from North Dakota State University in 1942 with a Bachelor of Science degree. Carol taught junior high and high school science and chemistry at Enderlin, ND for half a year prior to graduation.

She taught home economics at Alexandria, MN from 1942-1946. Carol worked one summer in the "cut-up" department at C.D. Johnson Lumber Co. in Toledo, Oregon building houses for defense workers. She was the Douglas County Minnesota 4H Club Agent from 1946-1948 and the Minnesota State 4H Club Agent from 1948-1951. Carol was much involved with the Rural Youth Organization, known as the YMW, with young adults aged 18-35 in Douglas County and in the state of Minnesota for many years.

Carol married Fred Shubeck October 21, 1950. She served as local 4H club leader in Brookings and Clay County in South Dakota for over 20 years. She taught Sunday school, was involved with WELCA, was a Women's Extension Club member for over 40 years and was a member of the Dalesburg Scandinavian Association. She liked to fix up and paint farm buildings and enjoyed visiting friends and residents at Bethesda Home in Beresford. Carol also liked to entertain people, do crossword puzzles, and go to grandkid and church events. Being a descendant of the Pilgrims that came to America on the Mayflower she enjoyed studying genealogy. She was a recipient of the Eminent Homemaker award.

She is survived by her husband of 66 years, Fred Shubeck of Beresford; son, Paul (Carol) Shubeck of Beresford; daughter, Mary (Don) Josko of Sioux Falls; seven grandchildren, Conrad (Kelly) Josko, Kristen (Matt) Mueller, Christopher Josko, Mike (Katelynn) Shubeck, John (Megan) Shubeck, Heidi (Jonathan) Gillam and Katie (Josh) Clayton and 16 great-grandchildren. She was preceded in death by her parents and a daughter, Ruth.


A Celebration of Life service for Carol will be held at 2PM Saturday, August 5th at Dalesburg Lutheran Church, rural Beresford, with burial at Riverview Cemetery in Centerville. Visitation will be 6-8PM Friday at the church with a prayer service at 7PM. The family requests memorials to the Dalesburg Scandinavian Association.
